Nikki Lee is a 28 year old mom of 2 boys and bonus mom of 2 boys. As an avid reader, she enjoys reading material of all kinds. Everything from fiction, non-fiction, educational and more. One of her passions is spending time hiking, geo-caching and anything involving the outdoors with her family.
Nikki Lee is currently awaiting the start of a brand new Holistic Nutritional Certification program in Connecticut to obtain her certification as a Holistic Health Coach. She is also in the beginning stages of creating a blog filled with information on her family's adventures in living a completely plant based life style, one she hopes to turn into a family friendly cookbook for busy vegan lifestyles.
