Ashley Campbell

Ashley Campbell has been a vegan, animal rights enthusiast since birth. Originally based out of Brooklyn, NY, she now lives in Hawaii with her partner and enjoys bike rides along the coast, snorkeling with sea turtles, working at the local school and discovering exciting new vegan recipes along the way. From bringing her infamous sugar cookies to the weekly potluck or preparing a batch of black bean burgers for BBQs on the beach, Ashley's favorite thing is sharing delicious, healthy vegan food that's accessible on all budgets and time frames. Ashley graduated from New School University with a degree in Education Studies and has taught in alternative, progressive schools in Manhattan, NY, Brooklyn, NY and throughout the Hawaiian islands.
